Happy Weekend!

Flowers for my blogging friends! I bought these at the grocery store for you yesterday.
I think they are so pretty.
So I thought I would make Black-Eyed pea salad for you today.
I always forget something. I forgot the cilantro. A big hand full of cilantro chopped up and mixed in at the end. Don't forget that like I did.

I use about 1/4 red onion chopped.
1/4 cup olive oil and the juice of a lime. Sometimes I use the bottled lime juice if that's all I have. It works just fine.
Mix really well.






3 cans drained Black Eyed peas.





A chopped English Cuke. I will use regular ones also. But I do seed them.




1 chopped jalapeno.






4-5 chopped Roma tomatoes. Or what ever you have.






Mix all together and pour the lime juice over salad.
This makes a lot. We eat it all weekend.
It's lite but very tasty.
3 cans Black Eye peas
4-5 tomatoes
1 English cucumber
1/4 red onion
hand full chopped cilantro-don't forget like I do
1/4 cup olive oil
juice of 1 lime
Sometimes I add black beans.
Enjoy!

Thanks for sharing your pretty flowers with us. They are so pretty even though I am looking out the window at snow as I write this. A lovely first day of spring. Your recipe sounds so yummy. I wonder if my hubby would try it. I am going to ask . Take care.
